It is a great way to celebrate the fall season and stock up on some of your favorite items for your family. Safeway is one of my favorite places to shop because I always know that I will find just what my family is looking for. They have everything I need from after school snacks to family meal items and baby necessities. Plus they are only a few blocks from my house so it's nice and convenient!   Chicken Chimichangas Recently you might have seen a post on my facebook page asking for dinner ideas. I want to thank you all for your amazing ideas! Especially Alison who gave me a recipe idea that I could not pass up! I had never in my life made Chimichangas. To be honest I thought that they would be really difficult. But, after reading Alison's recipe with a few of my own variations, I knew I had to give them a try!  Ingredients: 8oz pkg. cream cheese 8oz. Mexican blend shredded cheese 1 packet dried taco seasoning 1 medium rotisserie chicken 12 flour tortillas1 medium yellow onion diced1 6oz can diced green chili's1/4 c olive oil (for frying) or spray oil for baking Toppings: shredded mexican blend cheese sour cream salsa Directions: 1. Indonesian Peanut Chicken!   I became a nanny at a young age to one little boy whose parents worked an hour away and were very career orientated. The little boy was 4 when I first met him and his mom absolutely loved trying out new foods and she sparked the love of cooking and baking in me. I had absolutely no idea how to cook other than boil water and make toast. So needless to say I was so grateful when they hired me with very little cooking experience! I had the desire to learn and one of my first recipes to ever cook and master was this delicious Indonesian Peanut Chicken recipe. Forward 18 years later and I now make this dish for my own family and have the ingredient list in my head.   Baked "Hard Boiled" Eggs I love hard boiled eggs. They are one of my all time favorite snacks. Hard Boiled Eggs are high in protein and low in calories making them a perfect quick healthy snack. I love hard boiled eggs because I can peel and eat them just how they are or I can add them to my lunch time salads! Even my daughter loves hard boiled eggs and often takes them in her school lunches. Because of my family loving them so much I often make 2-3 dozen 'hard boiled' eggs each month. But, all that cooking was getting tiresome. The truth of it was I was either getting them over done or not done enough. That is whey I decided to start baking my 'hard boiled' eggs. I love this idea because it get's the eggs cooked perfectly each and every time. The first thing I do is make sure the baking rack is right in the middle of the oven.  Lemongrass Thai Chicken I could eat chicken every day. I love the taste and it is much healthier then eating red meat. The only downside is my husband is not a fan of chicken. That is why I have to get very creative when I cook it! That is exactly what I did when I made Lemongrass Thai Chicken the other night for dinner...boy did it taste amazing! I had never before cooked with Lemongrass but it seems I have been able to experiment with it more and more here recently. I must say that it is a welcome addition to my cooking! Yum! INGREDIENTS 4-5 boneless skinless chicken breasts ¼c  olive oil 1 stalk lemongrass finly diced 1 small head garlic diced 1 teaspoon of dried red chilies 1 small purple onion 2 fresh basil leaves 2 tablespoon soy sauce 1 tabelspoon rice vinegar DIRECTIONS: 1.   Ingredients 4 tablespoons olive oil 1-1/2 teaspoons fajita seasoning 1 teaspoon garlic powder 1/2 teaspoon chili-lime seasoning 1/2 teaspoon crushed red pepper flakes 1 1/2 pounds boneless skinless chicken breast, cut into thin strips 1 red bell pepper, julienned 1 green bell pepper, julienned 1 yellow onion 6 flour tortillas (8 inches), warmed Extras Salsa, shredded cheese, hot sauce, guacamole and sour cream. Directions In a large skillet saute sliced chicken in olive oil over medium heat for 5-6 minutes or until browned and no longer pink. add peppers, onion and spices. Saute until onions are transparent and peppers are soft. You can now serve your fajita meat like it is or spoon it into a tortilla! To liven things up, I often try out new recipes I find around the internet. Lately, Pinterest has been a huge resource for me. Orange Chicken!

    Ingredients: 1 egg1/3 c Orange Juice1 c herb-seasoned stuffing mix, crushed1 1/2 tsp paprika1 Tbs grated orange peel1 tsp salt8 skinless, boneless chicken breast halves6 Tbs butter or margarine, meltedOrange Slices   Directions: In a shallow bowl, add egg and orange juice. Beat together. In second bowl add stuffing mix, paprika, orange peel and salt. Mix well. Dip chicken into egg mixture and then into crumb mixture, coat well on both sides. Pour melted butter into baking dish and place chicken in baking dish with melted butter, turning once to coat both sides of chicken with melted butter.
