S’more Brownies
S’more Brownie Ingredients –
¾ C. flour
2 C. semi-sweet chocolate
2 tbs cocoa powder
4 tbs. butter
3 eggs
1 ½ C. sugar
½ C. packed brown sugar
1 tsp. Vanilla extract
1 tsp. Baking powder
½ tsp. Salt
2 tbs. sugar
1 C. graham cracker crumbs
3 tbs. melted butter or margarine
1 bag of large marshmallows (you will need approximately 45 marshmallows cut into thirds for your S’more layer)
(2) 12 ct. muffin tins or 15 Silicone Baking cups (optional but highly recommended and awesome = easy clean-up!!)
Directions –
Preheat the oven to 350 degrees.
#1. Combine the flour, cocoa powder, baking powder and salt. Set aside.
#2. In a microwave safe bowl, melt the butter and chocolate in 15-20 second increments, stirring until completely melted. Let cool 2-3 minutes.
#3. In another bowl, combine the eggs, sugar and vanilla. Add in the melted chocolate mixture and then slowly add in the flour and cocoa mixture. Mix well and set aside.
#4. In a small bowl combine your 1 C. of graham cracker crumbs, 2 tbs. of sugar and your 3 tbs. of melted butter. Mix well. The mixture will be wet and crumbly.
#5. Add 2 tbs. of the graham cracker mixture to the bottom of each of your muffin tins OR silicone baking cups. Gently press down with your fingers forming the crust. Repeat with all your tins/silicone baking cups.
#6. Using a pair of kitchen scissors you want to cut your large marshmallows into thirds and place 3 slices on top of the graham cracker mixture in each cup. Repeat this step with all your muffin tins/cups.
#7. Once all your tins have graham cracker and marshmallows pour about 1” of brownie batter on top. Fill close to the top but try not to overfill and they will spill out while baking.
#8. Bake 25-30 minutes. Around 25 minutes insert a toothpick into the center of the brownie. If it comes clean, they are done.
*Makes approximately 15 muffin tins/cups. 1 cookies = 1 serving. Store in an airtight container 1-2 weeks.

Wow these sound completely delicious! It’s too bad my son is allergic to dairy and eggs. I bet he’d love these. He can have very very small portions though, so I might try them sometime and give him just a bite-sized piece, yum!
