Lemon Glazed Lemon Bread
I remember the first time I ate a lemon. I was about 7 years old and I was with my Aunt Jolene who was around 14. She used to cut lemons into wedges and eat them like an orange. I remember that sometimes she would eat them with salt and other times without. One day as she was eating a lemon she offered me a slice. I have been addicted ever since! There is something about that tangy and tart flavor that I can’t resist!
My daughter is now the age I was during my first lemon experience and I can honestly say that she loves to eat lemons as well! It makes my husband cringe each time he sees my daughter pop a lemon wedge into her mouth!
Ingredients:
1 ¾ cup of flour
1 Tablespoon of Baking Powder
1 teaspoon of salt
1 ¼ cup of sour cream
1 ¼ cup of sugar
3 Large Eggs
½ cup of Vegetable oil
2 Tablespoons of Lemon Extract (yellow Lemon Sqeezes)
1 Teaspoon of Pure Vanilla Extract
Oven is set at 350 degrees and needs to bake for 50-60 minutes until your tooth pick comes out clean.
Topping #1
1 cup of powder sugar
½ cup of fresh lemon juice
1 Tablespoon of Lemon Extract
Final Glaze Topping #2
½ cup of powder sugar
¾ cup of raw sugar (can also use regular sugar)
¼ Cup of Fresh Lemon juice
3 Tablespoons of Lemon Extract
Directions:
First you mix all your dry ingredients in a separate bowl and set aside.
Then mix your wet ones in your mixer. Mix your Sour Cream, sugar, eggs, lemon and vanilla extract. Now add in your dry bowl ingredients of flour, baking powder, and salt into the wet slowly. After that is mixed add in your vegetable oil.
Then pour into your big loaf pan or two small ones. Bake until your tooth pick comes out clean.
While it is baking and almost done on the kitchen timer. Start making your first topping.
On a sauce pan melt your powder sugar, lemon juice, and lemon extract until it’s in liquid form.
After your loaf cooled for a minute Poke a lot of holes on top with a tooth pick and pour slowly your first topping onto it, giving it time to seep into the loaf.
Next let it sit for a moment and make your second topping.
In a sauce pan melt the powder sugar, Raw Sugar, Lemon Juice, and Lemon Extract until it is a little syrupy- Can add in more raw sugar if needed. Want it to be a little bit thick. Then drizzle that and rub it on top of the loaf.
Now you can eat it right away…..or store in your fridge and enjoy later!
