Garlic and Onion Sauteed Swiss Chard I have had Swiss Chard coming out of my ears here lately. I am not complaining as I love Swiss Chard. But I can say that I have had to start getting creative with my Swiss Chard cooking. Well that was until I came up with this awesome recipe. Now I can honestly say that I have ate this same exact recipe every day for an entire week! It has been the perfect lunch and oh so tasty! Another bonus to this recipe is that my husband will eat it! This is the first Swiss Chard recipe that he has actually like! Now I can't get enough! Ingredients: 2 cloves garlic diced 1/2 medium red onion diced 1 tbs olive oil 3 cups swiss chard   Directions: 1. Add olive oil, garlic and onions to frying pan.   Plumcot Barbecue Sauce I am the first person to try new things. Recently I was able to score a huge bag filled with Plumcots. This was my first experience with Plumcots and besides snacking on them every day I was excited to try out some new canning recipes. As I searched the internet I had a hard time finding recipes that contained Plumcots. That is when I decided to get a little creative! Homemade Apricot Salad Dressing!   I love canning and here recently I have been trying out lots of new recipes that I had never tried before. This includes the amazing Apricot Salad Dressing! My uncle has an apricot tree here and brought me over a huge bag of them the other day. I still had a lot of canned apricots from last year so I decided that I needed to do something different and really fun with these apricots. That is when I came across the recipe for Apricot Salad Dressing. Canned Strawberry Rhubarb Jam   I love how well Strawberries and Rhubarb go together. There is no better combination in my opinion! That is why when I was given the chance to stock up on some strawberries and rhubarb I could not turn them down. I canned so many different strawberry rhubarb combinations including pie filling, syrup and this jam! I am excited that I will be able to have Strawberries and Rhubarb all year long!   Bacon Brocolli Salad! I will never forget the first Christmas party I spent with my husbands family. I was nervous because I had never met any of them but at the same time I was filled with excitement to get to know more about his family and who helped make him into the person I was growing to love. While at this Christmas party I seen a salad unlike anything I had ever seen before. Napa Cabbage, Carrot and Mushroom Stir-Fry I love stir-fry. It is one of the most cooked meals in my home. Not only is it healthy with all those yummy vegetables but the combinations and flavors are endless! Recently I decided to make a stir-fry unlike any I have ever made before. This time I cooked with vegetables only which is something I do not do often in stir-fry. I used Napa Cabbage, Carrots and Mushrooms! It turned out amazing and the whole family could not get enough. Lemongrass Asparagus Pasta I love asparagus. It is one of my all time favorite vegetables! Recently I was able to score an amazing deal on 28 lbs of asparagus. This allowed me to experiment with lots of great recipes! One of the recipes I tried out was the Lemongrass Asparagus Pasta. I love how quick and easy this turned out to be and it helped me to add a little flavor to the usual asparagus dish that I prepare. Leek and Bok Choy Soup I have been on a soup kick recently. I am not sure why as the weather is warming up and hot soup is not usually something I want during a hot day. The other day as I was looking through my kitchen I noticed my Leek's and Boy Choy that I had on hand. I got to thinking that these would probably make an amazing soup...boy was I right! The flavors of the Leek's mixed with the Bok Choy was super light and tasty. I love that this is a great soup to eat by it's self or to go with a sandwich. Plus it is low in calories which is a huge bonus for me! Ingredients: 2 Leeks 1 T olive oil 6 cups water4 beef bulion cubes1 bok choy 3 basil leaves  Directions: 1. Apple Streusel Pancakes I have been on the lookout for a great pancake recipe. I never really do anything fun with my pancakes except the occasional handful of fruit being thrown into the batter. This time around I really wanted something over the top! That is exactly what I with this amazing Apple Streusel Pancake recipe! I am also excited because I know these delicious pancakes will make the perfect Easter Breakfast! Stuffed Sweet Potatoes!


  Sweet Potatoes are not just for Thanksgiving.....they are for any time of year! Plus who does not like stuffed baked potatoes? This is a recipe that is bursting with flavor! Yum! Stuffed Sweet Potatoes Ingredients: 4 sweet potatoes 1 cup Monterey Jack Cheese 1 bundle broccoli diced 4 cloves pressed garlic 1 small onion 1/2 package bacon Preheat the oven to 450 degrees F. Poke sweet potatoes sporadically with a fork before placing in oven for baking. Bake for  45-50 minutes or until tender. In large skillet fry bacon until crispy. Remove from pan and drain grease only leaving about 1 tbs grease in pan for other ingredients. Add garlic and onion to skillet. Saute stirring often until onion is caramelized. Roasted Carrots with Lime


I love carrots and recently I have had an abundance of the rainbow colored carrots! It's wonderful! The kids love the fun color's and I love that they are eating them without complaining! One of the recipes I have made recently that my family fell in love with is Carrots baked with lime. This dish is very easy and gives the carrots a new fun flavor that is perfect for summer time! Roasted Carrots with Lime  Ingredients: 1 lb carrots2 Limes Juiced2 tsp Italian seasoning (mixed Thyme, Basil, Oregano etc....)2 tbs olive oilsalt and pepper to taste Preheat oven to 400 degrees Wash carrots, peel and cut off ends. Sliced Baked Potatoes With Cheese We are a potato loving family. It helps that my cousin's family owns a huge potato farm and we get the most delicious potatoes ever! One of our favorite ways to prepare them is by baking. It is a healthier option for us and keeps us away from the fryer. Recently I saw a picture somewhere around the internet (I think one of my friends posted on facebook) of Sliced  Baked Potatoes that someone baked. I thought this was a brilliant idea and we decided to give it a try. We decided when making our sliced baked potatoes that we wanted something more in them then just salt and pepper so we layered each slice with cheese! Eggplant Parmesan Fingers I used to dislike Eggplant. It was one of those vegetables that I really wanted to like and I used to try it out in all kinds of recipes that would just later get trashed because I could not stand the taste of the eggplant. I was discussing this with my cousin (who runs and she let me in on her amazing eggplant recipe. I must admit that I could not wait to give this a try as it did not only sound simple and easy but very kid friendly! Ingredients: Eggplant crushed croutons - any flavor1/4 c Parmesan cheeseMarinara Sauce for dipping 1.Use vegetable peeler to peel purple skin off eggplant. Slice Eggplant into thin strips much like french fries. 2. Easy to Make Homemade Coconut Chips! I am a sucker for chips. I don't care if they are potato, tortilla, beets, kale, salad savoy, or anything else! Chips are just amazing. Ok so the truth is, I think I am more addicted to the salt then anything which I know is not the healthiest but that's ok. At least if I am getting my 'chip' fix in a healthy way I guess that should count for something. Recently I came across a recipe for Coconut Chips. I have never, ever seen coconut chips before but since I have been on the coconut fix I knew I had to give them a try! Delicious Homemade Coconut Bread! Oh my I can't get enough of all the coconut lately. It is giving me a chance to cook all kinds of new foods. One of them being coconut bread which is something I have never heard if before let alone made. That is until now! When I was a child I hated coconut. It was one of my Mom's favorite things to cook with. She would purchase anything with coconut in it because she loves it so much. Now that I am getting older I realize that I am starting to like coconut more and more. Recently I have been able to experiment with lots of great coconut recipes.
