  Baked "Hard Boiled" Eggs I love hard boiled eggs. They are one of my all time favorite snacks. Hard Boiled Eggs are high in protein and low in calories making them a perfect quick healthy snack. I love hard boiled eggs because I can peel and eat them just how they are or I can add them to my lunch time salads! Even my daughter loves hard boiled eggs and often takes them in her school lunches. Because of my family loving them so much I often make 2-3 dozen 'hard boiled' eggs each month. But, all that cooking was getting tiresome. The truth of it was I was either getting them over done or not done enough. That is whey I decided to start baking my 'hard boiled' eggs. I love this idea because it get's the eggs cooked perfectly each and every time. The first thing I do is make sure the baking rack is right in the middle of the oven. Apple Streusel Pancakes I have been on the lookout for a great pancake recipe. I never really do anything fun with my pancakes except the occasional handful of fruit being thrown into the batter. This time around I really wanted something over the top! That is exactly what I with this amazing Apple Streusel Pancake recipe! I am also excited because I know these delicious pancakes will make the perfect Easter Breakfast!   When I first heard of Broiled Grapefruit I thought "Are you nuts?" But since I am adventurous when it comes to food I went to the store and purchased a bunch of different grapefruits and decided to give them a try.   Ingredients: 4 Grapefruit1 Tbs Ground Cinnamon1 Tbs White Sugar4 tsp Butter The first thing you will need to do is pre-heat your broiler. (I put mine on low) The next step is to cut your grapefruit in half. Use a small knife to cut along each triangle section. Remove sections discarding all thick skin and pulp. Place the sections into a bowl. After the sections are cut out and the think skin is removed you will need to dish the cut sections back into the grapefruit halves. Sprinkle Cinnamon and Sugar over each half and place pad of butter on half as well. Place on cookie sheet and Broil 3-5 minutes or until butter is melted. I try to cook fish at least one time a week for my family and I am always trying to find great recipes to test out with my family. Recently I found a recipe on for Lemon-Orange Orange Roughy. It was amazing so I thought I would share the recipe with all of you! Ingredients- 1 Tbs Olive Oil4 (4 oz) Orange Roughy Fillets1 Orange Juiced1 Lemon Juiced1/2 tsp Lemon Pepper First you will take the Olive Oil and heat it in a large skillet over medium-high heat. Place the Roughy Fillets in the skillet and pour the Orange and Lemon juice over fish fillets.
