Hearty Homemade Yogurt Parfait for Baby Using Gerber Lil' Bits! My daughter is finally eating solid foods and enjoying them! I love watching her face every time she eats a new food. It is wonderful to see her eyes light up when she comes across tastes and textures that she likes and are new to her. Something else that is fun is seeing her want to enjoy the same foods that she see's me eating. I know that she is watching me and she is learning from me so I want to make sure I always show her and give her the best. One of my favorite meals to eat is Breakfast. Each morning my oldest daughter and I enjoy overnight oats with yogurt and fruit. I love how hearty it is as well as tasty. For a few weeks now my youngest has watched intently as my oldest and I enjoy our oats. She is constantly crying and reaching for our food. Spiced Honey Vanilla Peaches   I am a sucker for peaches! Recently I found two bushels of peaches at my front door. My Uncle has a Peach Tree in his back yard and this year he had an abundance of peaches that he decided to share with me. I was thrilled! As I was debating what I was going to can with this years peach crop I decided upon Spiced Honey Vanilla Peaches. I had never canned these before but they sounded amazing and I knew that I had to give them a try!   Ingredients:  7 lbs peaches peeled and sliced2tbs vanilla extract4 cinnamon sticks1/2 cup white sugar1 cup honey2 cups water  Directions: 1. Wash peaches and score an X at bottom of each peach. 2. Blanch peaches 1 minute in boiling water. 3. Immediately place blanched peaches into ice water and let sit for 1 minute. 4. The leaves are turning and  the fall festivities are starting up and my house is smelling of pumpkin spice and cinnamon. I love this season and everything that goes along with it. One of the things I have been doing is making a simple applesauce with my husband's 92 year old great grandmother. She has taught me more about life than I ever have imagined. She has helped form me into the belief that if you can make it yourself then do it because it will save you money and also be much healthier for you as well. I love that our projects we do involve my kids as well. They help take the apple peelings to the compost and helped mash the apples through the sieve.   Canned Strawberry Rhubarb Syrup Growing up my Grandma always had the biggest garden. Literally it was the same size as my house as a child. Her garden is HUGE! My Grandma grows everything in her garden. For example you can find currents, peas, swiss chard, cucumbers, tomatoes, beets, green beans, squash, pumpkins and more. It is one of the best places on this earth! Every time some one stops by to visit Grandma in the summer the first place they go is the garden. There is nothing like picking fresh peas and eating them right then and there. Yum! Another thing my Grandma grows in her garden is strawberries and rhubarb.  Steel Cut Oats Breakfast Here is my daily breakfast that I love ~ I believe it's healthy but also delicious and the best part is that I can prep the oats on a Sunday and keep it in a container in the fridge for the week and just scoop out my portion each morning and add my toppings, microwave it and viola, I have a fast and easy breakfast that is delicious!   I prefer steel cut oats over rolled oats because of the texture - steel cut oats are known to have a nuttier flavor and more chewy than rolled oats which generally are mushy. Don't get me wrong, I am a fan of all oatmeal but the steel cut oats are my favorite!   Baked "Hard Boiled" Eggs I love hard boiled eggs. They are one of my all time favorite snacks. Hard Boiled Eggs are high in protein and low in calories making them a perfect quick healthy snack. I love hard boiled eggs because I can peel and eat them just how they are or I can add them to my lunch time salads! Even my daughter loves hard boiled eggs and often takes them in her school lunches. Because of my family loving them so much I often make 2-3 dozen 'hard boiled' eggs each month. But, all that cooking was getting tiresome. The truth of it was I was either getting them over done or not done enough. That is whey I decided to start baking my 'hard boiled' eggs.
