Hearty Homemade Yogurt Parfait for Baby Using Gerber Lil’ Bits!

Hearty Homemade Yogurt Parfait for Baby Using Gerber Lil' Bits! My daughter is finally eating solid foods and enjoying them! I love watching her face every time she eats a new food. It is wonderful to see her eyes light up when she comes across tastes and textures that she likes and are new to her. Something else that is fun is seeing her want to enjoy the same foods that she see's me eating. I know that she is watching me and she is learning from me so I want to make sure I always show her and give her the best. One of my favorite meals to eat is Breakfast. Each morning my oldest daughter and I enjoy overnight oats with yogurt and fruit. I love how hearty it is as well as tasty. For a few weeks now my youngest has watched intently as my oldest and I enjoy our oats. She is constantly crying and reaching for our food. This got me to thinking....can I make her some of the same thing? I know that she can not chew steal cut oats yet but she can most defiantly have her baby approved … [Read more...]

Breakfast Crepes

Breakfast Crepes These sweet little breakfast crepes (called French Pancakes by some people and Swedish Pancakes by others) are light and flavorful, with delicate, crispy brown lacy edges. Filled with cinnamon sugar or berries and topped with a spoonful of whipped cream, they make a wonderful company breakfast or weekend tradition.   They are surprisingly simple to make, but it is much easier to keep plates filled if two people are working together. Children enjoy being enlisted to butter, fill, and roll the crepes. A non-stick pan makes the crepes easy to flip. You may even want to get creative and flip them in the air! Larger pans make bigger crepes–which means less time cooking. Hold each crepe together with a toothpick, if desired, but make sure it shows clearly to avoid unpleasant surprises.   Use your imagination with the filling; almost any fruit or jam goes well with crepes. If you have extra batter, cook the crepes and wrap them well … [Read more...]

Simple Homemade Applesauce AND It’s Freezable!

Ribbet collagedone

Simple Homemade Applesauce AND It's Freezable! We can now officially say that it is Fall. The leaves are turning and  the fall festivities are starting up and my house is smelling of pumpkin spice and cinnamon. I love this season and everything that goes along with it. One of the things I have been doing is making a simple applesauce with my husband's 92 year old great grandmother. She has taught me more about life than I ever have imagined. She has helped form me into the belief that if you can make it yourself then do it because it will save you money and also be much healthier for you as well. I love that our projects we do involve my kids as well. They help take the apple peelings to the compost and helped mash the apples through the sieve. It becomes moments that they will cherish with their great great grandmother more than they realize now at their young age. This is what makes this "more" than easy..it makes this memorable for all. We start off with a simple and … [Read more...]

Canned Strawberry Rhubarb Syrup!

Canned Strawberry Rhubarb Syrup Growing up my Grandma always had the biggest garden. Literally it was the same size as my house as a child. Her garden is HUGE! My Grandma grows everything in her garden. For example you can find currents, peas, swiss chard, cucumbers, tomatoes, beets, green beans, squash, pumpkins and more. It is one of the best places on this earth! Every time some one stops by to visit Grandma in the summer the first place they go is the garden. There is nothing like picking fresh peas and eating them right then and there. Yum! Another thing my Grandma grows in her garden is strawberries and rhubarb. Those two things together are amazing and I usually do as much with them as I can. For example this year I canned Strawberry Rhubarb Syrup, Pie Filling and Jelly! Strawberry Rhubarb Syrup is amazing on pancakes! It is not a typical syrup that you might hear about often but it is still one of my all time favorites! Ingredients: 8 cups diced … [Read more...]

Steel Cut Oats Breakfast~ Gluten Free & Vegan~ My Favorite Breakfast!

Steel Cut Oats Breakfast Here is my daily breakfast that I love ~ I believe it's healthy but also delicious and the best part is that I can prep the oats on a Sunday and keep it in a container in the fridge for the week and just scoop out my portion each morning and add my toppings, microwave it and viola, I have a fast and easy breakfast that is delicious!   I prefer steel cut oats over rolled oats because of the texture - steel cut oats are known to have a nuttier flavor and more chewy than rolled oats which generally are mushy. Baked “Hard Boiled” Eggs

Baked "Hard Boiled" Eggs I love hard boiled eggs. They are one of my all time favorite snacks. Hard Boiled Eggs are high in protein and low in calories making them a perfect quick healthy snack. I love hard boiled eggs because I can peel and eat them just how they are or I can add them to my lunch time salads! Even my daughter loves hard boiled eggs and often takes them in her school lunches. Because of my family loving them so much I often make 2-3 dozen 'hard boiled' eggs each month. But, all that cooking was getting tiresome. The truth of it was I was either getting them over done or not done enough. That is whey I decided to start baking my 'hard boiled' eggs. I love this idea because it get's the eggs cooked perfectly each and every time. The first thing I do is make sure the baking rack is right in the middle of the oven. Next I pre-heat the oven to 325 degrees. Then I place the eggs on the baking rack. When doing this I make sure non of them are … [Read more...]
