Baked “Hard Boiled” Eggs

046done

Baked "Hard Boiled" Eggs I love hard boiled eggs. They are one of my all time favorite snacks. Hard Boiled Eggs are high in protein and low in calories making them a perfect quick healthy snack. I love hard boiled eggs because I can peel and eat them just how they are or I can add them to my lunch time salads! Even my daughter loves hard boiled eggs and often takes them in her school lunches. Because of my family loving them so much I often make 2-3 dozen 'hard boiled' eggs each month. But, all that cooking was getting tiresome. The truth of it was I was either getting them over done or not done enough. That is whey I decided to start baking my 'hard boiled' eggs. I love this idea because it get's the eggs cooked perfectly each and every time. The first thing I do is make sure the baking rack is right in the middle of the oven. Next I pre-heat the oven to 325 degrees. Then I place the eggs on the baking rack. When doing this I make sure non of them are … [Read more...]

Leek and Bok Choy Soup I have been on a soup kick recently. I am not sure why as the weather is warming up and hot soup is not usually something I want during a hot day. The flavors of the Leek's mixed with the Bok Choy was super light and tasty. I love that this is a great soup to eat by it's self or to go with a sandwich. Plus it is low in calories which is a huge bonus for me! Ingredients: 2 Leeks 1 T olive oil 6 cups water4 beef bulion cubes1 bok choy 3 basil leaves  Directions: 1.  Cheese Stuffed Green Chilis Recipe! My family loves Green Chili's and one of my favorite recipes ever is when my hubby grills up cheese stuffed chili's! This is a recipe that he made up himself a few years ago and since then it has been a staple in our home. Ingredients:Green Chili'sCheddar Cheese The first thing you will need to do with your Green Chili's is wash them off and cut off the tops. After the tops are cut off I carefully remove the seeds and try not to split the pepper down the side. After the tops are cut and the seeds are removed you can place sliced or shredded cheese inside of your peppers. Make your own Tortilla Chips!

009done

Home made tortilla chips are some of the easiest things to make! I try to keep frozen corn tortillas on had so encase of unexpected dinner parties or company! These are always a huge hit for guests and gives them something to snack on along with the salsa I can every year. First take Corn or Flour Tortillas of any size. For this recipe I used smaller white corn tortillas. You will then need to cut the tortillas into the size of chips you would like. for the 6" round tortillas it is easy just to cut them into fours as shown above. For the frying part I use my deep fryer. I heat oil to about 350 degrees. Next you will place the tortillas into the Hot Oil. Please be careful when doing this!! I like to place the tortillas one at a time but you do not have to do it that way. Just watch to make sure none of them are stuck together as this will prevent your chips from getting crispy. Fry tortillas for 5-7 minutes or until desired crispness. I like mine extra crispy … [Read more...]
