Cherry Ice Cream Topping Recipe + Blue Bunny Ice Cream!

Blue Bunny Ice Cream is my favorite dessert. I love the huge variety of flavors and how easy it is to find on my local Walmart shelves. Plus I live in the fruit basket of Colorado and can easily make some great fresh fruit ice cream topping to pair it with! Within a 10 mile radius I can go pick fresh Cherries, Apricots, Plums, Peaches, Grapes and more! I love living here!

Recently my daughter and I stopped by a local farm and picked some fresh cherries. While we were picking the cherries my daughter and I talked about what we would like to do with them. Lots of ideas came to mind but  one of the first things she said was make ice cream topping. Of course I agreed so that is exactly what we did. After picking Cherries I headed to my local Walmart and purchased Vanilla Bean Blue Bunny Ice cream to pair with my Cherry Ice Cream Topping.

This Cherry Ice Cream Topping takes less then 10 minutes so we were eating ice cream in no time! Yum!

Cherry Ice Cream Topping Ingredients:

2 Cups Fresh Cherries – Pitted

1 Cup Water

1/4 Cup Sugar

1/2 tsp Almond Extract

1 TBS Corn Starch

** Will also need a Cherry Pitter if you use fresh cherries.

Directions:

1. Place all ingredients into a sauce pan.

2. Cook on Medium heat until water starts to boil.

3.Boil about 2 minutes stirring often.

4. Turn heat to low and simmer (stir often) about 4-5 more minutes or until sauce starts to thicken. (If it gets too thick you can always add more water….or more corn starch if not thick enough)

5. Serve over your choice of Blue Bunny Ice Cream Flavor and enjoy!

  1. That looks delicious. With the fresh cherries I know it has to be. Your Blue Bunny ice cream looks so creamy I wanted to reach through the screen and help you eat it, lol. I have seen it in the freezer at my local Wal-mart. I just always worry new ice cream might be grainy but yours sure isn’t. Thanks for sharing!

  2. My favorite from that brand is either chocolate or coffee. I am a hot fudge sauce kind of girl with some whipped cream on top! Hum–I love apricots–maybe I will attempt to make an ice cream sauce out of them.
