Easter Chicks Butter Cookies

Spring is one of my favorite times of year. The grass begins to green, the trees sprout new leaves, the flowers start to peek out from the ground…..and the chicks begin to hatch! To help gear up for the Easter season I have been focusing on fun Easter goodies and treats. I home school so I look for any excuse to incorporate fun treats into my curriculum! These Easter Chick Butter Cookies were a fit with both the Spring season and homeschooling…oh and did I mention they were a HUGE HIT with the kids! They enjoyed getting messy while dipping the cookies in chocolate, eating the coconut before it could even make it to the cookie and loved eating the left over candy! We had a blast making these adorable Easter Chicks Butter Cookies!

 

Easter Chick Butter Cookies

Butter Cookies Ingredients –

 

1 C. butter, softened

1 ¼ confectioners sugar

1 egg

1 tsp. Vanilla

1 1/2 C. flour

1 tsp. Baking soda

¼ tsp. Salt

 

Directions:

Preheat oven 375 degrees

 

In a medium size bowl combine the softened butter, confectioners sugar, 1 egg and vanilla.

 

In a separate bowl, combine the flour, baking soda and salt. Slowly add the flour mixture to the wet mixture, stirring well.

 

Place in fridge to set for about 15-20 minutes.

 

Using a cookie scoop and place the cookies on a greased cookie sheet 1-2” apart.

 

Bake for 10-12 minutes. Cookies will turn a light gold brown. Do not over bake.

 

Remove from over and let cool completely for about 1 hour. Makes 2 dozen cookies

Ingredients for Chicks –

 

1 C. flaked coconut

yellow food coloring

brown mini M&M’s (located in the baking aisle)

orange Lifesaver gummies (found in the candy section of the store)

Wilton yellow candy Melts

½ C. White frosting

yellow food coloring

 

Easter Chick Butter Cookies

 

Directions –

 

Once the cookies are completely cooled melt the Wilton candy melts in a microwave safe bowl stirring every 30 seconds until melted. Let cool 2-3 minutes.

 

Take 1 cookie at a time and complete submerge in the chocolate using a spoon if needed to completely cover. Lift the cookie out on a fork and let the excess chocolate drip back into the bowl.

 

 

Place on wax paper or a foil lined cookie sheet to set. Repeat this process with the other cookies.

 

**You can also place the cookie sheet in the fridge after dipping all the cookies to speed up the setting process – it only take about 30 minutes to set in the fridge.

Making the Cookies Into Chicks –

#1. Place the 1 C. of flaked coconut into a large Ziploc type bag. Add 2-3 drops of food coloring. Close the bag and shake well to mix the yellow food coloring and the coconut together. You may want to add a few more drops of food coloring depending on how yellow you want your coconut to be. Pour onto a plate and set aside.

 

#2. Next, frost one cookie at a time – place the mini brown M&M’s on the frosted cookies for eyes.

#3. Then, using a pair of kitchen scissors cut each orange Lifesaver gummy in ½ – then cut out a triangle from the ½ making a beak for the chick. Place on the frosting making his nose. Repeat steps #2 and #3 for 2-3 cookies at a time. Sprinkle the yellow coconut on their faces before the frosting sets.

-Prep time – about 2 hours from start to finish – including letting the cookies cool.

 

 

These cookies taste amazing! I love the butter flavor in the cookie itself and the way it pairs with the chocolate and coconut. This is yet another treat the whole family will love!
